Red-Pepper Sauced Chicken and Bowties

1 jar (12 oz) roasted red peppers, drained
1 tub (15 oz) part-skim ricotta cheese
1/3 cup freshly grated Parmesan cheese
1 large clove garlic
1/2 tsp salt
1/4 tsp black pepper
1 lb bow-tie or other fancy-shaped pasta
1 box (10 oz) frozen green peas
2 cups shredded cooked chicken
Garnish: chopped parsley
1. Bring a large pot of lightly salted water to a brisk boil.
2. Meanwhile cut 1 roasted pepper in narrow strips; set aside. Process remaining peppers and Sauce ingredients in a food processor or blender until smooth.
3. Add pasta to pot and cook as package directs.
4. Place frozen peas in a colander set in sink. Drain pasta over peas (boiling pasta water will thaw peas).
5. Put pasta and peas into a large bowl. Add chicken and sauce. Toss to mix and coat. Scatter pepper strips over top; sprinkle with parsley.
