    4 - chicken breasts boneless, skinless
    10.34 ounce - can cheddar cheese condensed soup
    3/8 ounce - package enchilada sauce mix
    10 ounce - can Rotel diced tomatoes and green chiles
    1 cup - sour cream


    Lightly brown the chicken breasts on both sides in a lightly greased skillet. Remove the chicken breasts and place in a 2-quart casserole dish or slow cooker. Mix the remaining ingredients in a small mixing bowl and stir until well combined. Pour over the chicken breasts and bake, covered at 350 degrees for 40 minutes or slow cook on low for 4 hours.

    Complement with Spanish rice, shredded lettuce and cornbread.
    Yields 4 servings
