    4 boneless, skinless chicken breasts
    2 pkgs lipton spanish rice mix
    1 can mild enchilada sauce
    water
    Shredded cheddar cheese

    Recipe



    Preheat oven to 350 degrees. Spray a 13x9 glass pan with Pam. Empty both packages of Lipton Spanish Rice Mix into pan, dry. Pour water over rice, until the water level is just to the top of the rice.

    Place chicken breasts on top. Pour enchilada sauce over chicken. Cover with foil and bake for 45 min.

    Uncover and sprinkle with cheese. Put back in oven until cheese is melted.
