Spicy Peanut Chicken

2 tablespoons peanut oil
1 cup peanuts
1 teaspoon garlic
2 teaspoons chili powder
1 teaspoon cayenne pepper
1 teaspoon ginger
3 boneless, skinless chicken breasts cut into 1-inch cubes
1 cup green onion, sliced
1 cup celery, sliced
1 large red bell pepper, cut into strips
1 cup chicken broth
2 tablespoons cornstarch
2 tablespoons soy sauce
Heat the oil in a wok or electric skillet. Add the peanuts, and stir-fry for 1 minute. Drain on paper towels. Place the chicken cubes into the wok. Sprinkle the chicken cubes with the spices, and stir-fry for 3 to 4 minutes or until chicken is no longer pink. Remove from the skillet and keep warm. Stir-fry the onion, celery and bell pepper until tender crisp about 2 minutes. Return the chicken and peanuts to the wok. Combine the chicken broth, cornstarch and soy sauce together in a small mixing bowl until smooth. Gradually add to the wok stirring constantly. Cook for 2 minutes or until sauce is thickened and bubbly.
Serve hot over rice.
Tip: To hasten dinner, omit chopping the onion, celery and bell pepper. Instead, use a 1-pound package of your favorite blend of frozen stir-fry vegetables and prepare as directed.
Serve this tasty entree over rice or Ramen noodles.
