Alvin's Chicken and Wild Rice

List of Ingredients
2 packages fast cooking long grain wild rice mix (6.2 oz)
¼ cup butter
2 medium chopped onions
4 stalks celery chopped
2 cans drained 8oz water chestnuts
5 cups cooked chicken
1 lb cheddar cheese shredded
2 cans of mushroom soup
2 8oz containers of sour cream
1 cup of milk
1 tsp salt and pepper
½ cup of breadcrumbs
Recipe
Prepare rice according to directions and set aside. Melt butter in skillet and sauté onions, celery and water chestnuts. Stir in rice, chicken, 3 cups of cheese and other ingredients with the sautéed items and pour into a 15 x 10 dish. Top with breadcrumbs and remaining cheese. Bake 30 minutes at 350 degrees.
For freezing purposes, it makes about four 8x8 dishes. That’s a meal with some leftovers for us.
