Baked Chicken with Wine & Curacao

1 Orange
1 tsp. Rosemary
1 tsp. Thyme
Salt & pepper
1 Small onion (quarted)
1/2 cup white wine or any light wine

Cover baking pan with foil. This is really necessary because
the honey will burn on the pan. I learned the hard way!!!
Pre-heat oven to 400 degrees. Wash and clean inside of chicken,
and place in baking pan. Quarter the orange and squeeze juice
all over the chicken and put the rinds inside the chicken along
with the quarted onion. Sprinkle chicken with salt,
pepper,Rosemary and Thyme. Pour the wine into the baking pan
lifting the chicken to make sure the wine gets under the
chicken. Roast for 40 minutes at 400 degrees.
While chicken is roasting, mix the following ingredients:
3 Tbs. melted butter
3 Tbs. honey
3 Tbs. Dijon Mustard
1 Tbs. Orange Marmalade
3 Tbs. Orange Liqueur or Curacao
After the chicken roasts for 40 minutes, remove the pan from the
oven, and turn the oven down to 350 degrees. Pour the mixture
over the chicken and return chicken to the oven cooking for one
hour and 10 minutes. I tried laying foil loosely over the
chicken to keep it from browning so dark, but that didn't work
well. The spices, mustard and etc. soak into the chicken and
give the whole chicken a wonderful flavor!
