2 small chickens
8 garlic pods, minced
1/2 cup fresh parsley, minced
1 lb. unsalted butter
salt
red cayenne pepper
Recipe
Cut chicken into serving sized pieces. Remove skin from chicken. Season chicken. Fry in 1/2 lb. butter in heavy black cast iron pot or Dutch oven. When chicken is browned, put it all back in the cast iron pot. In a small pot, melt remaining butter & put garlic & parsley into it for about 1 minute. Pour this over chicken in iron pot, turning chicken over so that butter mixture coats all chicken. Turn fire low & cover pot for about an hour until chicken is done.
