List of Ingredients
Olive oil to cover bottom of large pot
7 or8 large yelow or white onions, chopped
2 bunches parlsey,(important for flavor)
12-13 cups water
15-18 skinned and cleaned chicken breasts (add 4 thighs for flavor)
1 1/2 tsp salt and black pepper to taste
Red pepper flakes if desired
Spanish Saffron-several threads to taste
Recipe
Heat olive oil-add onions-saute until soft and golden-add minced parsley-saute a couple of minutes. Add water and seasonings. Drop in chicken-cook till tender. Skim off excess grease. Take chicken out and debone in large pieces when cool.
In separate pot, cook 2-3 packages shell pasta, Drain-DO NOT RINSE-add small amount of broth/chicken and 2 or mored wedges grated parmasean-add more broth/chicken -serve
