Greek Roasted Chicken

1 whole chicken 2-3 pounds
3 lemons
4 tbs olive oil
3 cloves garlic
1 1/2 tbs oregano
1 tsp seasoning salt

wash chicken and pat dry. Place chicken in square baking dish and rub with 2 cloves of garlic. Rub seasoning salt over chicken. Squeeze juice of all 3 lemons and mix with olive oil until it makes an emulsion. Whisk oregano into lemon juice mixture. Stuff lemon halves (already juiced) and garlic cloves into cavity of chicken. Pour lemon juice mixture over chicken making sure it is well covered. Bake at 350� for 1 1/2 to 2 hours.
** I use a rosemary spring from my garden to "baste" the chicken with the juices several times during baking.
