Pepper Jack Chicken

1/4 c.mayonnaise,divided
3/4 c.(3oz) shredded pepper jack cheese
2 Tbsp fresh chopped cilantro
3 Tbsp sour cream
1 Tbsp finely chopped jalepino peppers
1 clove garlic,minced
6 boneless,skinless chicken breastsRecipe
Combine 3 Tbsp mayonnaise,the cheese,cilantro, sour cream,jalepino pepper,and garlic.Set aside. Place chicken between 2 sheets of plastic wrap and flatten to 1/4 inch thickness,using a meat mallet or rolling pin. Brush both sides of chicken lightly with remaining 1 Tbsp of mayo;place chicken on rack in a broiler pan.Broil 5 1/2 inches from heat( with oven door partially open) 5 min on each side.Spread cheese mixture evenly over chicken; broil 5 more minutes or until mixture is browned. 6 servings
NOTE:I thought this recipe would be really spicy, but it turns out pretty mild(for us anyway).It has a good flavor,the chicken is juicy,and it only takes 15 minutes(ok,maybe 20 minutes top) to make.
