    Stir-Fried Snow Peas

    1 Tbs. soy sauce
    2 tsp. rice wine vinegar
    1 tsp. Oriental sesame oil
    1 Tbs. water
    1/4 tsp. sugar
    2 Tbs. vegetable oil
    1 scallion, cut into 1/2 inch pieces
    1 lb. snow peas, strings removed
    6 ounces mushrooms, quartered
    8 canned water chestnuts, drained and quartered

    Recipe



    Combine first 5 ingredients and salt to taste in a jar with a tight-fitting lid. Shake vigorously and set aside. Heat oil in a wok or heavy nonstick skillet over high heat. Stir-fry scallions about 10 seconds. Add remaining ingredients and stir-fry 1-2 minutes. Stir in soy sauce mixture and cook 1-2 minutes or until snow peas are tender.
