Stir-fried Chicken w/ Pineapple & Ginger

4 Teaspoon Dry Sherry
4 Teaspoon Sesame Oil
1 lb. Skinned Chicken
2 Tablespoon Peanut Oil
2 Tablespoon Minced Ginger
2 Red Bell Peppers
2 Scallions
1 Teaspoon Soy Sauce
0.5 Pineapple
1.5 Teaspoon Cornstarch
Cook chicken in sesame oil and sherry. Remove from heat and cover. Add peanut oil to skillet and cook minced ginger, peppers and scallions. Add chicken and chopped pineapple. Add soy sauce and heat for 10 minutes until peppers are soft. Serve over Basmati rice.
