2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup margarine
1 egg -- lightly beaten
1 tablespoon water
1/2 teaspoon almond extract
10 ounces red raspberry or strawberry preserves
Recipe
Combine flour, baking powder, and salt. Cut in margarine until mixture resembles coarse crumbs. Add egg, water, and extract, mixing lightly with fork until dough forms a ball. Chill 1/4 of the dough. Press remaining dough on bottom and 1/2-inch up sides of a 9-inch springform pan. Spread dough with preserves.
On lightly floured surface, roll chilled dough into a rectangle, 1/8-inch thick; cut into 1/2-inch wide strips. Place strips diagonally over preserves to form lattice; press edges to seal. Bake in 350 degree F. oven 35 to 40 minutes or until lightly browned.
Loosen crust from rim of pan; cool before removing rim of pan
