Line a 9" tube pan with with 2 thicknessess of heavy greased paper.
Heat oven to 300*F
1 1/2 cups butter
2 cups sugar
6 eggs, beaten
1 tablespoon grated orange rind
1 teaspoon grated lemon rind
3 1/2 cups sifted flour
1 teaspoon baking powder
1 cup seedless raisins
1 1/2 cups currants
1/2 cup citron, cut fine
Recipe
Cream the butter and add the sugar gradually, creaming thoroughly.
Add the eggs and the grated fruit rind.
Sift the flour and the baking powder together and add to the creamed mixture.
Stir in the fruits after the currants have been plumped. (To do this, wash in warm water, drain, and spread out in a pan, cover, and put in a slow oven until the wrinkles disppear)
Pour the batter into the prepared cake pan, and bake in a slow oven for about 2 hours.
