    Cake:
    3/4 cup Five Roses all purpose flour (white, never bleached or with wheat bran)
    1/4 cup Chipits low fat cocoa
    1 teaspoon baking powder
    1/4 teaspoon salt
    3 eggs
    1 cup granulated sugar
    1/3 cup water
    1 teaspoon vanilla

    Filling:
    1 cup whipping cream
    2 tablespoons granulated sugar
    1 tablespoon finely ground coffee
    Icing:
    1 3/4 cups chocolate icing

    Cake: Grease a 15 x 10 inch jelly-roll pan, and line with parchment. Combine flour, cocoa, baking powder and salt; set aside. Beat eggs, 3 minutes, until foamy. Gradually beat in sugar, 4 - 5 minutes, until very thick. stir in water and vanilla. Blend in flour mixture until smooth. Pour batter onto prepared pan. Bake in 375 degree oven 12 - 15 minutes until a cake tester inserted into center comes out clean. Cool 5 minutes. Turn out onto kitchen towel dusted with cocoa, trim edges; remove parchment. Roll up from one narrow end; cool in towel on rack.
    Filling: Beat whipping cream until thickened. Beat in sugar, until stiff peaks form . Fold in coffee.
    Assembly: Unroll cake; spread with filling; re-roll. Spread icing over roll to cover. Decorate with red and green cherries. Chill until serving.
    Makes 12 servings.
