Cranberry Ice Cream

1 Gallon of vanilla ice cream softened ( home made or store bought )
8 oz cranberries
1 cup sugar
1/4 cup water
1 tsp vanilla ( optional )

Place cranberries in a large pot with sugar and water and bring to a boil over medium heat, stirring constantly. Cool briefly. Stir in the ice cream to blend well. Repack into container and refreeze over night. Serve as is or over apple pie.
Note: add some toasted nuts ( pecans ) to the mixture if desired
