½ cup butter, softened
11/3 cups sugar
2 tsp. finely shredded lemon peel
2½ tsp. baking powder
½ tsp. baking soda
3 eggs
1 tsp. vanilla
3¼ cups all-purpose flour
1 cup dried cherries, snipped
1 cup chopped almonds
4 oz. white chocolate baking squares, cut up
1 Tbsp. shortening

In a large mixing bowl beat butter with electric mixer on medium speed 30 seconds. Add sugar, lemon peel, baking powder, and baking soda; beat until combined. Beat in eggs, and vanilla. Beat in as much flour as you can with mixer. Stir in remaining flour, cherries, and almonds.
On lightly floured surface, shape dough into three 12x2-inch rolls. Place rolls on large ungreased cookie sheet; flatten slightly. Bake in 375° oven about 20 minutes or until wooden toothpick inserted near center comes out clean. Cool on baking sheet 1 hour.
Cut each log crosswise into ½-inch-thick slices. Place slices, cut side down, on cookie sheet. Bake in 325° oven 8 minutes; turn and bake 8 minutes more or until crisp and light brown. Cool on wire rack.
In small saucepan over low heat stir white chocolate and shortening just until chocolate melts. Drizzle atop cooled cookies. Let stand about 1 hour at room temperature until set. Makes about 6 dozen biscotti.
