    4½ lb. sweet potatoes
    ½ cup whipping cream
    1/3 cup butter
    ¼ cup chopped fresh ginger
    12 cloves garlic, sliced
    Salt and Freshly Ground Black Pepper

    In an 8- to 10-quart Dutch oven cook potatoes, covered, in enough boiling water to cover, for 30 minutes or until tender; drain. Cool slightly; peel. Return potatoes to Dutch oven. Mash with a potato masher.

    Meanwhile, in a small saucepan bring cream, butter, ginger, and garlic to boiling. Remove from heat. Cover; let stand 15 minutes. Strain mixture through a fine-mesh strainer. Use the back of a large spoon to press liquid out of solids. Discard solids. Stir cream mixture into mashed potatoes; heat through. Season to taste with salt and pepper. Makes 8 to 10 servings.
