    Grandma Bogey's Molasses Pumpkin Pie

    2 1/2 - 3 lb. piece of pumpkin
    2 eggs
    1/4 cup sugar
    1/2 teaspoon ground nutmeg
    pie shell
    3/4 cup heavy cream
    1/2 teaspoon ground ginger
    1/4 teaspoon ground mace
    1/4 cup dark molasses

    Scoop out the seeds and pull out the fibrous threads from the pumpkin and cut into medium pieces. Fill a large pot with water almost covering the pumpkin pieces, cover and simmer until tender, 25-30 minutes. Scrape flesh from skin. Puree flesh in a blender or food processor, work the puree through a strainer to remove any fibers. Beat the eggs, add eggs and cream to the pumpkin puree, add the remaning ingredients and beat to combine. Pre-bake the pie shell till almost brown. Add mixture to shell, bake 20 mintues at 350 degrees.
