Holiday Bread Pudding

4 c. cubed bread
1 1/2 c. heavy cream
4 eggs
1 c. sugar
2 tsp. vanilla (OR seeds from quarter of fresh vanilla bean)
1/4 tsp. salt
1/4 c. cranberries
1/4 c. apple, chopped
1/4 c. currants or raisins
1/2 tsp. cinnamon
Recipe
Let bread sit out overnight, so it's stale and hard.
Combine cream, eggs, sugar, vanilla and salt. Stir in fruit and cinnamon. Then, stir gently into bread mixture. Let sit 5 -- 10 minutes, so liquid is somewhat absorbed.
Pour into buttered 10-inch cake pan or baking dish.
Bake at 350 degrees until firm, about 45-60 minutes depending on oven. To test for doneness, insert toothpick or knife, it should come out clean.
Best served warm. 10-12 Servings.
