Holiday Spanish Clementines Salsa

4 clementines from Spain, peeled, chopped
1/2 small red onion, diced
1 small jalapeno pepper, seeds removed, minced
2 teaspoons chopped fresh cilantro
1 tablespoon fresh lime juice
1 teaspoon extra virgin olive oil
1 teaspoon honey
Recipe
Combine the clementines, red onion, jalapeno and cilantro in medium bowl. Separately, whisk the lime juice, oil and honey. Stir into the clementine mixture. Makes 4 servings, about 1/3 cup each.
