    2 1/2 cups whole-wheat pastry or all-purpose flour
    1 tablespoon baking powder
    1 teaspoon baking soda
    1/2 teaspoon salt
    2 teaspoons cinnamon
    3/4 teaspoon nutmeg
    1 15-ounce can pumpkin
    3 eggs
    1 1/4 cups packed brown sugar
    1/4 cup plus 1 tablespoon applesauce
    3/4 cup chopped walnuts, divided
    1 cup (6 ounces) butterscotch-flavored morsels, divided

    Combine flour, baking powder, baking soda, salt, cinnamon and nutmeg in medium bowl. In large bowl, beat together pumpkin, eggs, sugar and applesauce.

    Add flour mixture and beat for 3 minutes. Stir in 1/2 cup walnuts and 3/4 cup butterscotch morsels. In small bowl, combine remaining nuts and morsels.

    Spoon about 1/4 cup batter into 24 paper-lined muffin cups. Top with 1 teaspoon of nut mixture. Bake in preheated 350-degree oven for 20 to 23 minutes, or until done. Remove to rack to cool.


    Makes 24 cupcakes
