    Pumpkin Pancakes w/Pumpkin Maple Sauce

    2 cups unbleached white flour
    2 tablespoons brown sugar, packed
    1 tablespoon baking powder
    1 1/4 teaspoons pumpkin pie spice
    1 teaspoon salt
    1/2 cup pumpkin
    1 large egg
    2 tablespoons vegetable oil
    1 cup whole milk
    1 tablespoon vegetable oil (for griddle)
    1/2 cup walnuts, chopped (for garnish)

    Recipe

    1. Combine ingredients except 1 tablespoon vegetable oil and walnuts. Stir just until moistened; batter may be lumpy.

    2. Heat griddle or skillet over medium heat; brush lightly with vegetable oil.

    3. Pour 1/4 cup batter onto hot griddle; cook until bubbles begin to burst.

    4. Turn; continue cooking one to two minutes. Serve with Pumpkin Maple Sauce (below) and chopped walnuts for garnish.

    Makes about 20 pancakes.

    Pumpkin Maple Sauce
    1 cup maple syrup
    1/4 teaspoon ground cinnamon or pumpkin pie spice
    1 1/4 cups pumpkin

    Mix together until well blended.

    Makes 2 1/4 cups.
