    6 ozs dried tart cherries
    1 cup Madeira
    14 slices day old dense-textured white bread, toasted and torn into small pieces (about 8 cups
    1 1/2 cups toasted pecan pieces
    1/2 cup (1 stick) unsalted butter
    1 cup finely chopped onion
    1 cup finely chopped celery
    1/2 cup finely chopped shallots
    3 crisp apples, peeled and coarsely chopped
    1/2 cup golden raisins
    1/2 cup finely chopped flat-leaf (Italian) parsley
    2 tsp dried tarragon, crumbled
    1 tsp dried thyme
    10 to 12 dried sage leaves, crumbled
    1 tsp salt, or to taste
    1 tsp freshly ground pepper, or to taste

    In a small bowl, soak the cherries in the Madeira for several hours or overnight.
    In a large bowl, combine the bread pieces with the pecans. Drain the cherries, reserving the Madeira, and add them to the bread mixture.

    Melt the butter in a large skillet. Saut� the onion, celery, and shallots until the vegetables are softened, then add to the bread mixture. Add the apples, raisins, parsley, tarragon, thyme, sage, salt, pepper, and the reserved Madeira; toss the stuffing well. Cool, then stuff bird as usual.

    Note: Makes enough for an 18 lb. turkey
