Stenciled Sugar Cookies

1-3/4 cups all purpose flour
1/2 tsp salt
3/4 cup granulated sugar
1/2 cup unsalted butter at room temperature
1/4 cup sour cream
1 egg yolk
1 tsp vanilla
Royal Icing
Recipe
Stir together flour & salt. Beat together sugar ,butter, sour cream, egg yolk & vanilla until creamy & smooth. Stir in flour mixture. Shape into disk, wrap in plastic wrap & chill for several hours or overnight. Heat oven to 350F. Lightly grease 2 baking sheets. Roll out dough on lightly floured surface to 3/8" thickness. Cut into rounds with 3" scalloped cookie cutter. Reroll scraps. Place on cookie sheets spacing 1-1/2" apart. Bake 10-12 minutes or until lightly browned edges. Remove cookies to wire rack. Using Royal Icing & stencils, paint holiday designs on cookies by holding stencil flat on the cookie & with a clean 1/2" artist brush, brushing colored icing through stencil onto the cookie. Additional features can be painted on freehand or through a pastry bag.
Royal Icing:
Beat together 1/2 cup confectioners sugar, 2-3 tbsp water & 1 tbsp meringue powder until stiff & fluffy. Divide into 5 small bowls. Stir in a few drops of food coloring into each bowl with a little water until the icing is thick & opaque, but no longer holds a peak. Use to paint cookies.
NOTE: Stencils may be made by tracing designs from a book or tracing cutters onto parchment paper or waxed paper & then cutting out the shapes.
