White Chocolate Cranberry Nut Cake

1/2 cup unsalted butter
2 large eggs
1/2 cup sugar
2/3 cup packed brown sugar
1 teaspoon real vanilla extract
1/2 teaspoon soda
1 teaspoon baking powder
2 1/4 cups flour
1 cup chopped fresh cranberries
1/2 pound chopped white chocolate
1 cup chopped walnuts
1/4 cup rum or brandy, for flaming
chocolate leaves and cranberries, for garnish
Recipe
Preheat oven to 350 degrees.
Microwave butter 30 seconds on half power (to soften, not to melt). Whisk in eggs and sugar, and then add the remaining ingredients
Generously grease a fluted cake pan. Scrape the batter into the pan. Bake 45-60 minutes, or until nicely browned and cake tests done
Allow to stand about 20 minutes before inverting onto a serving platter. Flame and serve.
