Apple-Cranberry Crisp

Fruit:
8 apples, about 2 ½ lbs peeled and cored
¾ cup cranberries or raisins
2/3 cup brown sugar
2 tbsp all purpose flour
1 tsp ground cinnamon
¼ tsp nutmeg
½ tsp vanilla
Topping:
1 cup rolled oats, not instant
1/3 cup brown sugar
1/3 cup all purpose flour
1/3 cup cutter, at room temperature, cut into pieces
½ cup almonds, coarsely chopped (opt)
Recipe
Preheat oven to 350 F. Peel, core and slice apples into ¼ inch thick pieces. You should have 7 to 8 cups. Slice cranberries in half. Stir sugar with flour, cinnamon and nutmeg in a large bowl. Stir in apples, cranberries and vanilla until evenly coated. Turn into a 8 inch square baking dish. Gently press down fruit to level the top.
To make topping, mix oats with sugar and flour in a medium-sized bowl. Add butter and work with a fork until clumpy. Stir in nuts; sprinkle topping evenly of filling. Dish will be very full, but fruit filling will sink during baking. Bake until topping is golden brown and filling bubbles, abut 45 to 50 minutes. If top becomes too brown before apples are tender, loosely lay a piece of foil overtop of crisp and continue baking. Serve warm
Serve warm.
