Apple Walnut Upside-Down Cake

1 ½ pounds apples, peeled, sliced and cored
¼ cup butter
½ cup light brown sugar packed
¼ teaspoon fresh lemon zest
½ teaspoon cinnamon
1-tablespoon dark Jamaican rum
1/3 cup chopped nuts
Cake:
1 2/3 cups sifted cake flour
2 teaspoons baking powder
½ teaspoon salt
1/3-cup butter
¼ teaspoon fresh lemon zest
½ cup sugar
2 large eggs
1-teaspoon vanilla
½ cup apple juice
Recipe
Using a cast iron 10” skillet heat the first ingredients, stirring to simmer, reduce down to dark syrup.
While the apple mixture is reducing mix up the cake batter and preheat the oven to 375.
Remove the cast iron skillet from the heat after reducing and pour the cake batter over the top. Bake on the lower 2/3’s of the oven for 35 minutes. Let cool for 5-10 minutes, run a knife around the edges and invert onto a serving platter. Serve warm with ice cream or a topping.
Now I changed the recipe as follows:
5 gala apples
2/3 cups of white sugar
1-teaspoon cinnamon
1/8-teaspoon cardamom
1/8 teaspoon lemon juice
¾ cups halved walnuts
1-teaspoon vanilla
Using the skillet as the same method above, I added the vanilla when the apples were almost reduced down to the dark syrup.
Cake mix, yellow or white or butter
3 eggs
1-cup water
1/3-cup oil
½ cup sour cream
Mix well and pour over the caramel apples and nuts.. bake for 38 minutes..
