Awesome Holiday Potato Casserole

3 pounds baking potatoes, peeled and quartered
1/2 cup butter or margarine
2 (3oz) packages cream cheese, softened
1 cup (4oz) shredded cheddar, divided
3/4 cup finely chopped green pepper
3/4 cup finely chopped green onions
1(2oz) jar diced pimiento, drained
1/2 cup grated Parmesan cheese
1/2 cup milk
1 tsp. salt
Recipe
Cook potato in boiling water to cover 15 minutes or until tender; drain and mash. Add butter and cream cheese; beat at medium speed of an electric mixer until smooth. Stir in 1/2 cup cheddar cheese, green pepper, and remaining ingredients.
Spoon mixture into a lightly greased 11x7x1-1/2 inch baking dish. Bake, uncovered at 350 for 25-30 minutes or until thoroughly heated. Sprinkle with remaining 1/2 cup cheddar cheese; bake an additional 5 minutes or until cheese melts.
If you are preparing it ahead of time, prepare as directed, do not bake. Cover and refrigerate up to 24 hours. Remove from refrigerator; let stand, covered, 30 minutes. Uncover and bake as directed above.
