Bourbon and Sweet Potato Pie

2 cups sweet potatoes, mashed
1/2 cup bourbon
3 eggs
4 T softened margarine
1 cup sugar
1 tsp. vanilla
1 tsp. nutmeg
1 T lemon juice
1 9 inch pie crust, unbaked



Recipe



Preheat oven to 325 degrees F. Using a wire whisk, mix together all ingredients thoroughly. Pour the mixture into the pie shell. Bake for 45 minutes, or until crust is golden brown and center is just set.
