Clementine curd:
3/4cup clementine juice
1/2 cup butter
1 1/4 cup sugar
Other ingredients:
2 eggs
Package frozen blueberries
1/4 cup port wine
Recipe
Combine 3/4 cup sugar, 1/2 cup butter and Clementine juice and bring to boil. 2 eggs beeten add to mixture cook low heat until thick cool. Cook frozen blueberries with 1/2 cup sugar,1/4 cup of port or wine. Cook until little liquid is left. Layer curd with blueberries and cookies.
