1 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
5 tablespoons butter
6 tablespoons cocoa powder
1 cup sugar
2 egg -- extra large
1 teaspoon vanilla extract
1 cup nus -- finely chopped
Recipe
Sift together flour, baking powder and salt, set aside. In a small heavy saucepan, melt butter over low heat, add cocoa, and blend with a fork or small whisk until smooth; remove from heat. Stir in sugar until combined. Transfer to a large mixing bowl, add eggs and vanilla, beat with a wooden spoon or mixer on low untilblended. Add flour mixture, beat until just blended. If using nuts, stir in at this point. Cover the dough with saran wrap and chill for at least 4 hours, or overnight is even better. The dough never gets really stiff, but it won't roll into nice balls if it is warm. Preheat oven to 400 degrees. Grab enough dough for one cookie sheet and leave rest in refrigerator. Using small hunks of dough, roll into little balls, 1/2 - 3/4 inch in diameter, then roll in powdered sugar. It is easier to work with the dough if you coat your hands with powdered sugar as well. Place the sugar coated balls onto a greased cookie sheet, 2 inches apart. Bake cookies for 8 minutes at 400 degrees, let cool a minute, then remove from pan. Store in airtight container to maintain soft and chewy texture.
