Cranberry/Marshmallow Delight

This needs to have time for setup so plan to make about 1 1/2 to 2 days ahead.
List of Ingredients
1 package of cranberries from produce dept.
1 small can crushed pineapple (tidbits will work in a pinch)
1 to 1 1/2 cups of sugar
2 packages of any red Jell-O
1 pint heavy whipping cream
I package of Miniature marshmallows
Recipe
In a blender or processor, finely chop the cranberries, almost to puree. Put in a small bowl. Drain most of juice from the pineapple and add to cranberry mixture. Add sugar. Mix well and refrigerate for a few hours or preferably overnight.
For the remainder, add 2 cups of boiling water to the Jell-O in a large bowl. Once Jell-O is dissolved, add only 1 cup of cold water so that Jell-O will be a bit thicker. Stir well. In another small bowl, beat whipping cream until thick but do not completely whip. Add to Jell-O mixture and stir in. Add marshmallows and fold in. Add the cranberry mixture from the night before and mix well. Pour into a 9x13 pan or 2 smaller containers that you can refrigerate. This will need a minimum of 4-6 hours to set up so again, I like to do mine the evening before I want it so it is ready the next morning. You can do this in the morning for an evening meal. Enjoy!
