    In a mixer bowl, beat two large eggs and then add 1 cup brown sugar and mix again. Add � cup oil and 1 tsp vanilla and mix again. Fold in 1 cup of fresh cranberries, � cup chopped walnuts, and 1 cup of chopped, unpeeled apple.

    In a separate bowl, mix 1 � cups flour, 1 teaspoon baking soda, 1 teaspoon cinnamon, and � tsp salt.

    Fold the dry ingredients into the wet ingredients �only until just moistened. Overmixing will cause tough muffins.

    Spray Pam into muffin cups. Bake muffins at 350 degrees for 20-25 minutes until light brown and firm on top.
