Cranberry Apple Muffins

In a mixer bowl, beat two large eggs and then add 1 cup brown sugar and mix again. Add ¼ cup oil and 1 tsp vanilla and mix again. Fold in 1 cup of fresh cranberries, ½ cup chopped walnuts, and 1 cup of chopped, unpeeled apple.
In a separate bowl, mix 1 ½ cups flour, 1 teaspoon baking soda, 1 teaspoon cinnamon, and ¼ tsp salt.
Fold the dry ingredients into the wet ingredients –only until just moistened. Overmixing will cause tough muffins.
Spray Pam into muffin cups. Bake muffins at 350 degrees for 20-25 minutes until light brown and firm on top.
