Cranberry Cornmeal Muffins

1 1/2 C. - All-Purpose Flour
1/2 C. - Yellow Cornmeal
1/2 C. - Sugar
1 T. - Baking Powder
1/2 t. - Coarse Kosher Salt
1 egg
8 T. - Butter (melted and cooled)
3/4 C. - Cold Milk
1 C. - Roughly Chopped Fresh Cranberries
Recipe
1. In a large mixing bowl, combine flour, cornmeal, sugar, baking powder, and salt.
2. In a small bowl beat the egg and add the milk and melted butter. Add the cranberries.
3. Add the liquid ingredients to the dry ingredients and mix with wooden spoon just until moist. The batter should still be lumpy.
4. Lightly spray a muffin pan and divide the batter evenly among the cups, letting the batter mound naturally.
5. Bake at 400 degrees for 20 to 30 minutes or until toothpick inserted in middle comes out clean.
