Gingerbread Muffins

1-1/2 cups flour
3/4 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. salt
1/4 tsp. cloves
1/4 cup sugar
1/4 cup shortening
1 egg
1/2 cup mild flavored molasses
1/2 cup hot water
Recipe
Grease twelve 2-1/2 inch muffin cups or line them with paper cups.
In a small mixing bowl combine flour, baking soda, cinnamon, ginger, salt and cloves. In a medium bowl beat together sugar and shortening until fluffy. Add egg and molasses, beat until combined. Add flour mixture and beat until well combined. Gradually add hot water and mix until just smooth.
Bake at 375 degrees for 20 minutes.
