Hudson Valley Pumpkin Nut Bread

3 1/2 cups unsifted all purpose flour
2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. double acting baking powder
1/4 tsp. allspice
2 2/3 cups of sugar (I am trying Splenda tonight and will let you know if it works)
1 cup vegetable oil
4 eggs
1/3 cup water
One 16oz. can of pumpkin
1/2 cup chopped walnuts or pecans
Recipe
Preheat oven to 350. Grease two 9X5 loaf pans; set aside. Combine flour and next 5 ingredients; set aside.
In a large mixing bowl, beat sugar and oil. Add eggs, water and pumpkin; beat well. Gradually add dry ingredients and stir until just blended. Sitr in nuts. Pour batter into greased loaf pans. Bake for 55 to 60 minutes, until toothpick inserted in center comes out clean.
Remove from oven to wire rack. Cool for 10 minutes before remove from pans, then let cool completely on wire rack. Makes 2 loaves.
It is good with cream cheese spread on it too.
shell's other notes: Note: I don't always add the nuts. Sometimes I will also add raisins or coconut to this recipe. It depends on who is eating it and if they like that stuff.
