    Ma Milano's Pumpkin Pie (from Scratch)

    Halve the pumpkin. Remove the seeds and the mushy stuff surrounding the seeds. Cut the pumpkin into manageable pieces. Remove the outer rind (either pare away with a sharp knife, or try scooping the pumpkin flesh away from the rind with a large spoon).

    Cut the pumpkin flesh into little pieces (slivers, almost). Place the pumpkin pieces in a large pot with 1/2 cup of water. It doesn't LOOK like enough water, but it is. The pumpkin flesh, as it cooks, exudes a LOT of water. Cover the pot.



    Simmer the pumpkin pieces over Medium to Low heat until it cooks down soft and mushy. Add 1 to 2 pounds of white, granulated sugar (taste & adjust) and cook, uncovered, until browned.

    Add ground cinnamon and Pumpkin Pie Spice to taste.

    MIX TOGETHER:
    2 cups of the cooked pumpkin mixture
    1-1/2 cups of cream
    3 eggs (well beaten)
    Vanilla (to taste)

    Mix these ingredients well and add back to the pot of cooked pumpkin.

    Place pumpkin mixture into unbaked pie shells and bake in a 400-degree Fahrenheit oven for 15 minutes. Then, lower the temperature to 300 degrees F and bake an additional 40 minutes.

    If you top these pies with the real, old-fashioned, heavy whipping cream which has been whipped to almost a butter consistency, you'll think you died and went to Heaven.
