Makeover Eggnog - Light

1 3/4 cups sugar
1/4 cup flour
1/2 tsp salt
2 quarts 1% or 2% milk
6 eggs, beaten lightly
3 tsp vanilla
2 tsp fat free half-and-half cream
1/2 tsp nutmeg
Recipe
In a saucepan, combine the sugar, flour and salt. Gradually whisk in the milk and eggs until smooth. Cook and stir over low heat until thermometer reads 160°, about 20 minutes. Remove from heat and stir in extracts. Cover & refrigerate until well chilled about 2 hours.
Just before serving strain eggnog mixture: stir in the cream and nutmeg. Pour into glasses.
Yields about 3 qts.
