Mandarin Pumpkin Marmalade Spread

1/2 Pound TCream Cheese
1/2 Pound Mascarpone
2 Tablespoons Unsalted Butter
1 Jar Mandarin Pumpkin Marmalade
1 Bag Ginger Snap Cookies



Recipe



Combine first three ingredients until thoroughly mixed and creamy. Line bowl, flan pan, or springform pan with plastic wrap. Fill with mixture and pack well. Chill until set* Unmold and put on platter. Top with Marmalade and serve with ginger snaps. *Can be served directly from decorative bowl, after topping with marmalade.

SERVING TIP: Arranging the mold surrounded by fruit with the ginger snaps in a separate basket works great on a buffet table.
