    3 cup milk (2%)
    5 cup canned pumpkin
    7 teaspoon pumpkin pie spice (mix of cinnamon, nutmeg, ginger and ground clove)
    3 cup granulated sugar
    dash salt
    1/2 cup butter or margarine
    1 cup chopped walnuts
    1 cup marshmallow creme
    8 oz white chocolate
    1 teaspoon vanilla
    2 med to large eggs
    1 prebaked pie shell

    Combine the milk, pumpkin, spice, sugar, salt, butter and nuts in a 5 qt. saucepan (the deeper the better because this really spits) and bring to a boil over medium high heat. Stir constantly. Reduce heat to medium and continue stirring for 10 minutes. Remove from heat and stir in chocolate until melted, then add the marshmallow and vanilla. Let cool to room temperature.

    Once cooled, add two slightly beaten eggs. Mix completely and pour into the pie shell.

    Bake at 325 F for 50-60 minutes or until the centre is firm. Let cool and eat served with whip cream or vanilla ice cream. The chocolate and cream really make this a rich and wonderfully smooth dessert. Everyone was glad the fudge didn't turn out!
