    3 TBSP shortening
    1/2 c. sugar
    1 egg
    1/2 c. canned or cooked, mashed pumpkin
    3 TBSP water
    3/4 c. plus 2 TBSP all-purpose flour
    1/2 tsp. baking soda
    1/8 tsp. baking powder
    1/8 tsp. salt
    1/4 tsp. ground cinnamon
    1/8 tsp. ground colves
    1/3 c. milk
    Mandarin Orange Sauce (Recipe Below)

    Beat shortening well with a wooden spoon; gradually add sugar, beating well. Add egg, and beat well. Stir in pumpkin and water.

    Combine flour, soda, baking powder, salt, and spices; add to creamed mixture alternately with milk, beginning and ending with flour mixture. Bake in preheated, oiled waffle iron. Cut waffles to make eight 4-inch squares. Serve waffles with Mandarin Orange Sauce.

    Serves: 8

    MANDARIN ORANGE SAUCE
    1 c. firmly packed brown sugar
    2 tsp. grated orange rind
    1/2 c. orange juice
    1 (11 oz.) can mandarin oranges, drained

    Combine first 3 ingredients in a small saucepan, stirring well. Bring to a boil; reduce heat and simmer until thickened (about 5 minutes), stirring frequently. Stir in oranges; serve warm.

    Yield: 1 1/2 cups

    NOTE: A perfect finale to a delicious meal!
