Pumpkin Walnut Ring

1 1/2 c. sifted cake flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ground cloves
1/4 tsp. salt
1/2 c. coarsely chopped toasted walnuts
2 large eggs
1/4 c. firmly packed light brown sugar
3 oz. safflower oil
2 TBSP walnut oil
1 c. fresh or canned unsweetened pumpkin puree
Recipe
Preheat oven to 350°. In a small bowl combine the flour, soda, spices, and walnuts and whisk to blend. In a large mixing bowl, beat the eggs, sugar, and oils for 2-3 minutes or until very smooth. Add the flour mixture and beat until completely moistened.
Scrape the batter into a prepared 6-cup baby Bundt pan or loaf pan, greased and floured. Bake 30-35 minutes or until a cake tester inserted in the thickest part of the cake comes out clean. Cool in the pan on a rack for 10 minutes and then unmold onto the rack.
