Roasted Baby Turnips with Garlic

2 lb. baby turnips, ¾–1½ inches in diameter
3 Tbsp. olive oil
¼ tsp. salt
¼ tsp. freshly ground black pepper
20 large garlic cloves, peeled
Recipe
Trim and wash turnips. Halve any turnips larger than 1 inch in diameter. Place in a 13x9x2-inch baking pan or shallow roasting pan. Drizzle with olive oil. Sprinkle with ¼ teaspoon each salt and pepper. Toss to coat. Bake, uncovered, in 425° oven for 15 minutes. Remove from oven; add garlic cloves and stir. Bake 15 minutes more; stir. Bake 10 to 15 minutes more or until golden brown and tender. Season to taste with additional salt and pepper. Makes 8 servings.
