2 (29-ounce) cans pear halves, drained
2 cups ginger ale
juice of one orange
juice of half of a lemon
2 Tbsp butter, melted
1 (4-inch) stick of cinnamon
3 whole cloves
1 1/2 c. red currant jelly
Mock Devonshire cream (recipe below)
Recipe
Arrange pears, cut side up in 13x9x2-inch baking dish. Combine next 6 ingredients and pour over pears. Cover dish and refrigerate overnight.
Remove from fridge and allow to sit at room temp. for 30 minutes. Cover and bake at 350F for 30 minutes, or until pears are hot.
Melt jelly in small sauce pan over low heat. Add 3 Tbsp. pan juices and beat well. Remove pears from liquid using slotted spoon. Place pears in serving dish and pour jelly mixture over pears.
Serve with mock Devonshire Cream
Mock Devonshire Cream Recipe
1 c. whipping cream
1/2 c. commercial sour ceam
2 Tbsp powdered sugar
1 tsp vanilla extract
ground cinnamon, optional
Whip cream until soft peaks form. Fold in next 3 ingredients.
Garnish with cinnamon if desired.
Yield: 2 1/2 cups
***Note: Pears may be served cold. Prepare as directed, omitting butter. Chill before serving.
