    Spicy Pumpkin Cookies

    1 C. shortening
    1 C. sugar
    1 C. canned pumpkin
    1 egg
    2 C. all-purpose flour
    1 T. pumpkin pie spice
    1/2 tsp. baking powder
    1/4 tsp. baking soda

    Cookie Glaze (recipe follows)
    chopped nuts, optional

    In a extra-large mixing bowl, beat together shortening and sugar with an electric mixer till fluffy. Add pumpkin and egg; beat till combined.

    In another bowl, combine flour, pumpkin pie spice, baking powder and baking soda. Beat into the pumpkin mixture (above) till combined.

    Spoon by rounded teaspoonfuls onto ungreased cookie sheets.

    Bake cookies in a 350* oven for 8 to 10 minutes or till the tops seem firm. Transfer to wire racks; cool.

    Perpare Cookie Glaze. Spread over cookies, if you like sprinkle with nuts.

    Makes 42 to 48 cookies.

    Cookie Glaze
    In a medium saucepan, combine
    1/2 C. packed brown sugar,
    3 T. butter
    1 T. milk

    Heat over mediun heat until butter is melted, stirring occasionally. Remove from heat. Stir in 1 C. sifted Powder Sugar and 1 tsp. vanilla.
    (if frosting is to thick, stir in a few drops of hot water.)
