60 maraschino cherries with stems
3 TBSP light corn syrup
3 TBSP butter
1/4 tspn salt
2 C. sifted 10X sugar
1-1/2 lb chocolate for coating
60 chocolate kiss type candies
slivered almonds, approximately 120
red cake decorating GEL (the type in the tube)
Recipe
Drain cherries. Let set on paper towels. Combine syrup, sugar, butter, & salt. Knead until smooth. Chill if too soft. Place 3/4 tspn. mixture around cherry, leave stem exposed. Place on a tray lined with waxed paper. Chill until firm. Meanwhile, unwrap chocolate candies. and melt dipping chocolate (DO NOT MELT CANDIES). Dip cherries, completely coating with melted chocolate. Place FLAT side of candy against end of cherry WITHOUT stem. Leave stem exposed to form "tail". Place 2 slivered almonds between candy & cherry to form "ears". Lay on side with pointed end of candy forming "nose". Using decorating gel, make 2 "dots" for eyes, and one on tip of nose. Return to tray covered with wax paper. Continue with other cherries & candies. Cover & chill until firm. Store in a cool place, 1-2 weeks. Makes 60 "MICE".
People love to get these, but admit they hate to eat them.
