Twice-baked Acorn Squash

1 Medium Acorn Squash
1 Tablespoon Mandarin Orange Syrup
1 Tablespoon Butter or Margarine
1/4 Teaspoon Salt
1/2 Teaspoon Pepper
3/4 Cup Jellied Cranberry Sauce (cubed)
1/4 Cup Mandarin Orange Segments
Dash of Ground NutmegRecipe
Heat oven to 325-degrees Fahrenheit.
Cut squash in half. Remove seeds and fibers. Place cut sides down in a baking pan. Fill pan with water to a depth of 1/4-inch. Bake until tender (about 45 minutes to 1 hour).
Scoop squash from the shells. Reserve shells to refill.
Place squash in a mixing bowl. Add the orange syrup, butter, salt, pepper, and nutmeg. Beat until smooth. (Mixture, at this point, can be refrigerated if necessary, but no longer than 24 hours).
Mix squash with cranberry sauce and mandarin segments. Spoon into reserved squash shells. Bake 25 to 30 minutes or until hot.
