Yam Bread

List of Ingredients
1 cup sugar
1/2 cup butter
2 eggs -- well beaten
2 Large yams -- baked either on a cookie sheet or in tinfoil
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons baking powder
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2 teaspoon vanilla
2 cups flour
Recipe
Preheat over to 325*
Cream butter and sugar until light in color and fluffy; slowly add the beaten eggs.
Note that the skin is discarded and not used for this recipe. Mash the inside of the yams; add to the butter mixture.
Add vanilla mixing well.
Sift together all dry ingredients and add to the bowl. Slowing mixing well.
Pour into a greased loaf pan or fluted baking pan and bake.
Cool in pan for 5 minutes, place on wire rack and sprinkle with powder sugar. Cool completely and serve.
This recipe can be varied by adding one or all of the following ingredients: Raisins, bananas, currents, shredded zucchini, chopped nuts, spiced rum.
