    1-/1/4 cups all-purpose flour
    6 TB whole wheat flour
    1 tsp baking soda
    1 tsp salt
    1-1/4 cups unsalted butter (at room temperature)
    1-1/4 cups lightly packed brown sugar
    ¼ cup Golden Fig Vanilla sugar
    ¼ cup white sugar
    1 TB vanilla extract
    2 large eggs
    2 TB milk
    2-1/4 cups quick oats
    1 cup cored, sliced, and dice apples
    ½ cup chopped walnuts

    Preheat the oven to 375 degrees

    Line several sheets with parchment or lightly grease them with butter.

    Sift flours, baking soda, and salt together and set aside. On medium high mixer speed, cream the butter, sugars and vanilla until light and fluffy. Add one egg and beat for 10 seconds. Scrape the bowl down and add second egg and milk. Beat until blended, about 15 seconds.

    Add the apples and walnuts and mix until incorporated. Drop by rounded tablespoons 3 inches apart. Bake until edges are golden (about 15 minutes)
    Cool on baking sheets.

    Store in airtight container or in the freezer. (Just allow them to come back to room temperature before eating).
